VEGGIE PATTY (vegan)

Ingredients

1 and ½ potato (peeled medium size)
¼ cup broccoli florets
¼ cup spinach,kale (cut)
¼ cup fresh peas,carrots(cut)
1 small Indian eggplant (or ½ Chinese eggplant)optional
2 teaspoonful dried curry leaves or 1 teaspoonful fresh leaves
1teaspoonful flax seed powder
1 teaspoonful tapioca starch
½ teaspoonful cumin powder
1 and ½ teaspoonful curry powder
½ teaspoonful red chili powder( I prefer green chili powder)
½ teaspoonful grounded pepper
Pinch of dry thyme, dill,oregano
optional:lime juice for taste

 
Directions
Take the peeled potato pieces into a bowl along with all the cut 
vegetables. Steam cook these vegetables.

Now add all the remaining dry ingredients and mash well but not make
a paste.

Take 2 teaspoonful of this mix into hand and make a patty of your 
desired shape. I felt they bake well if you do a flat shape

Once you make these little patties, cover them with bread crumbs by 
patting them.


Then,bake them at 400F for 15 min.
Now have your delicious patties with ketchup and let me know how 
they taste…
Note: You can add lime juice for taste before making patties.
